Turkey Tacos 

1 lb. ground turkey breast
1 packet taco seasoning
2/3 cup low fat chicken broth
1, 8 oz. can of whole tomatoes (drained)
1 tsp. chili powder
1/2 tsp. cumin
1/4 tsp. cayenne
2 tbsp. minced garlic
1/2 medium onion chopped
1/4 cup chopped celery
shredded lettuce
1 to 2 diced fresh tomatoes
3/4 cup fire chili roasted salsa
6 corn tortillas

Preparation:

Spray a Teflon pan with cooking spray and preheat over medium heat. Add the turkey breast, taco seasoning and chicken broth together and work with a wooden spoon as you brown the turkey. Add the tomatoes, onions, garlic, celery, spices and Cover. Reduce the heat and let simmer for about 10 minutes. Place the turkey taco meat into corn tortillas and top with shredded lettuce, salsa, diced tomatoes and then serve!
