Summertime Cucumber Salad 
2 Large Cucumbers
Dash sesame oil
½ C tbsp. rice wine vinegar
½ cup water
Dash sesame seeds

Peel & slice cucumbers in ¼ inch thick pieces combine all ingredients and let marinade and soak for at least 40 minutes. Since vegetables are unlimited you can use this as a vegetable side or place it over grilled chicken breast or fish.
