Oven Fried Fish 

(May also be used with shrimp, scallops or chicken tenders)

1 package frozen Tilapia or Flounder (or shrimp, scallops or chicken tenders)
1 cup Egg Beaters or egg whites
1/2 cup corn meal
1/2 cup flour or oatmeal
1/8 cup pecans
Cajun seasoning
Salt
Pepper
Pam cooking spray

Secret Sauce:
1 cup fat free mayo
1/2 cup ketchup
1 tablespoon horseradish
1 teaspoon Worcestershire sauce
1 teaspoon Louisiana hot sauce

Mix ingredients together. Add more seasonings as desired. Serves 4.

Tarter Sauce:
1 cup fat free mayo   
1/4 cup dill pickle relish
Dash of lemon juice
   
Mix together. Alter ingredients for desired taste. Serves 4.

Preheat oven to 400 degrees.  Spread foil on a cookie sheet, and spray with Pam cooking spray.  Place cornmeal, flour or oatmeal, pecans and seasonings into a food processor and grind mixture until fine.  Dip fish into egg whites then dip into corn meal mixture.  Place on baking sheet.  Cook fish in oven for about 20 minutes or until fish is golden brown and flaky. Serve with sauce.  Serves 4.
