Mexican Migas 

2 corn tortillas
diced bell pepper
diced onion
diced tomato
4 egg whites  

1 tsp. Taco seasoning

1-2 ounces low fat or fat free cheese

Pam Cooking Spray

 

In a toaster oven or oven, bake corn tortillas until crispy.  Cut tortillas into bite-sized pieces. Using the cooking spray, saute Bell peppers and onion over medium heat.  Add tomatoes and eggs, taco seasoning and tortilla chips. Scramble until eggs are done. Top with cheese.


Serves 1.
