Thaw spinach in the microwave. Squeeze the fluid out of the spinach using paper towels. Place spinach in a large bowl and add sour cream, cream cheese & mayonnaise and mix well. Fold in soup mix, water chestnuts, the scallions and cayenne. Mix well. Chill for two hours. Serve with vegetables, fat free crackers or baked tortilla chips.
