Egg Whites With Potatoes & Salsa 

1 serving egg whites

1 serving of potato or 1 serving of Ore Ida frozen potatoes

1 serving chunky salsa

Diced mushrooms, onions, jalapenos, etc.

Pam cooking spray

Microwave the potato on high for approximately 10 minutes or until done.  Spray a Teflon pan with cooking spray.  On medium heat, scramble the egg whites with the vegetables.  Place the potato on a plate and mash it down with a fork.  Top the potato with the scrambled egg whites and vegetables.  Top eggs with salsa and serve.  Serves 1.
