Cinnamon Frittata 

2 SERVINGS COOKED CREAM OF RICE

8 EGG WHITES UNCOOKED

1/4 TSP. VANILLA EXTRACT

1/4 TSP. COCONUT EXTRACT (OR ALMOND EXTRACT).

1/4 TSP. MOLLY MCBUTTER

1/4 TSP. CINNAMON

3 PACKAGES OF EQUAL OR SPLENDA

 

Preheat oven to 350 degrees. Mix cooked cream of rice, extracts,

and sugar substitute together. Fold into egg whites and mix

together well. Pour mixture into a deep baking dish. Bake in oven

for 35-45 minutes or until egg whites are slightly firm.
